I received a sample of some pecan rub from a friend and decided to give it a go on some catfish from my freezer stash.....

Used my drum with a bit of pecan...

made some apple dumplin's...

I threw in a spam and some veggies...

After an hour of smoke I rolled the smoked fish filets in shredded potatoes....

lol Thanks Jake, I don't think everyone loves spam... it's been finding it's way into my smoker a lot lately. I'm weird. :blushing: :)

Fantastic. I just cooked some SPAM this past weekend but I haven't ate any since I was a little kid before that. I used half of it in some fried rice and the other half in some red beans and rice. Spam is starting to grow on me again.

Spam, made right here in Minnesnowta. Gotta be fried crisp though. Whats not to like about it? Its spiced ham. Its better than that potted meat byproduct in a can crap some of you were speaking highly about on the other thread. Canned dogfood is better than that.

:drooling: Looks wonderful Jeannie. Gotta say I thought "smied" had to be a typo, but now I get it. Coating with shredded taters is a cool idea. Reminds me of something my brother serve one time. He spread mayo on fish fillets and covered them with crushed potato chips. Then baked in the oven.:wings:

Can you tell us more about the pecan rub? I got some John Henry's pecan rub that is awesome on pork. I think it would be good on fish or chicken too.

SPAM is huge in the 50th state. it's even on my kids school lunch menu

Thank you Tom! The pecan rub was given to me to try. I'm not sure what all is in it.

These are some catfish from my freezer that I caught this s-u-m-m-e-r. lol

The potato crust was messy to make but tasty! :)
