First of all, a bit of info. Our high school hosts Indiana State Preliminary Winter Guard competition. This past Saturday was our day, except for the dang snow that kept about 31 Guards from competing. We are hosting the make-up day, and it will last from about 6am til noon. We are going to do breakfast biscuits sandwiches and I'm looking for a good egg/sausage casserole that we can bake in those large turkey size roasting pans. I can't find any recipes that don't include bread in the casserole of any kind!! http://www.texasbbqforum.com/images/smiles/icon_confused.gif We want to serve a egg/sausage/onion/green pepper casserole that we can bake, cut up and serve on biscuits for a warm breakfast sandwich.
Any help would be appreciated!!!!
p.s. We lost around $3,000 last Saturday because of the snow and cancellations! We need to make up this money!

Yep, most breakfast casseroles would have bread (stratas) or hashbrowns in addtion to the other ingredients. I have a good one that has hashbrowns, but I'm not sure how that will fit with a biscuit.

If your ingredients are eggs, cheese and sausage with onions and peppers, then you've described a quiche. Here are a couple:
In this one, I'd substitue bell peppers for the chiles and forget the chili powder and cumin. http://www.recipezaar.com/96295

Look at this crustless one and consider adding onions and bell pepper instead of broccoli.
