I made tamales for the first time today. Made chicken with salsa verde ( my favorite ones), pork tamales and beef tamales both in red sauce. Made 10 dozen, cooked 5 dozen and froze the rest.

Keep this sort of thing up and I'm movin in! I'm a tamale nut and have been known to eat a dozen by myself. Love em dipped in a hot sauce or salsa.

Do you make them by hand or do you have a tamale machine to help out with the task?

I grew up thinkin' I didn't like tamales. All we ever had came in frozen TV dinners or in a can. Then we moved to Texas. Now I understand tamales and yours look fantastic! Do tell how you made 'em.

Being another Tamale lover, those look just right, moist and not to dry and not sticky. As most tamale lovers have their own recipes and building procedures I to would like to see your assembly process. E.T.

Those look wonderful, never made them but now they are on my to do list.
