View Full Version : New Years Black Eyes in Cornbread Bowls

I gave the traditional black eyed peas and cornbread meal a fun little twist this year. First the peas:

fresh black eyes in water with a scoop of Better Than Bouillon and creole seasoning...

meanwhile I sliced and...

fried the smoked salt jowl. Then I chopped it and added it to the peas along with some of the grease and deglazed the pan to get the brown stuff into the pot.

added a couple ham hocks and simmered for 3 hrs.

Don't look Tom - Cujo is about to eat your New Years food.

Looks really good and those bowls put it over the top. Nice save on the tear - it makes the pic even better with that notch in it.

Pig, the notch was actually where I taste tested the bowl with a gob of butter, but you're right; it helps make the pic.

Siesta, I cook the liquid to the a gravy-like consistency.

fill me in on the bowls like recipe and what kind of pan ya used.
i make a beer bread/cornmeal thet is course and would be good
made into a bowl like you did:thumbs up:

Can't help ya with his cornbread recipe but the bowls are made in the pans shown in http://www.theqjoint.com/forum/images/misc/subscribed.gif B reakfast Cups (http://www.theqjoint.com/forum/showthread.php?t=4641) thread. Hope that helps.

:thumbs up: Great meal, Tom! I need to pick up a set of those pans for myself. I never would've thought about BEPs in cornbread bowls, but that sure is a sweet way to get your lucky BEPs in for the new year.

About the pans; what Pig said. As for the cornbread recipe I used Lamb's Stone Ground Corn Meal. They have the recipe on the back of the bag.

1 C cornmeal
1 C flour
2 eggs
1/2 C veg oil
1tsp baking powder
2T sugar
1C milk

Mix it all up and pour into a greased 8X8 baking dish. Bake at 400 deg. for 30-35 min.

My variation:

Substitute buttermilk for plain milk. Reduce baking time for the small bowls. 20 min is good. 25-30 for the big un's.

My wife and I both really liked this recipe. Unfortunately, the cornbread did not agree with her. Made her nauseous. She believes it's the buttermilk. Guess I won't do that again. I saw a sour cream recipe online that I might try next time.
