I have always had trouble with charcole and smoking with wood I cxan get a propane grill the rignt heat and cook food but the others Im just an amature.

Practice - Practice and more Practice. What type of smoker/grill do you use.? Charcoal Briquetts or Lump?? Let us know these and other things and you will get a ton of knowledge from the group here. Again Welcome and Glad to Have yOu. :sign0016:

I know that when I went from gas to charcoal my main problem was with the fire dying out on me. I didnt have sufficient air flow under the coals...

Like was said, practice!

I used a gas grill for many many years. Then this spring I found out about indirect cooking. I bought a new grill (A Weber, not some cheap off brand I have tried in years past)to give charcoal another shot and now the gasser is in a corner out of the way on our front deck.
