Johnny Nix recipe. Not your average burrito.


DUTCH OVEN BURRITOS
8 flour tortillas
2 lbs deli ham, thinly sliced
8 oz Swiss cheese, shredded
4 cups lettuce, chopped
2 tomatoes, diced
1 green bell pepper, diced
3 green onions, chopped
1 cup mayonnaise
2 tsp mustard
3 tsp sugar
1 tsp celery seeds
4 tbs milk
For each burrito, arrange 6 slices ham on a tortilla. Sprinkle with Swiss cheese. Roll and secure with toothpicks.
Bake in Dutch oven on a pizza rack for 10 minutes or until cheese is melted.
Combine lettuce, tomato, green pepper and green onions in a large bowl. Toss until blended.
Combine salad dressing, mustard, sugar, celery seed, and milk in small mixing bowl. Blend until well mixed.
Remove burritos from oven, open tortillas about 1/2 way and spoon salad mixture evenly along center; add dressing mixture on top.
Roll up and serve.
Serves 8

Those sound great, Mike! And with the ham and cheese, very kid-friendly, too. I bet the younguns'd like those.
