Sorry. I hate to ask, but I need a no salt gravy for meatballs.
I am thinking of smoking the meatballs for added flavour. I just need a flavourfull gravy with no salt.

Get some beef bones from the butcher put them in the oven at 450 deg for 30 min. pull them out and brush them down with tomato paste and back put them into the oven till they are dark brown. dump them into a stock pot with 2-3 pepper corns, 1 onion,a stalk of celery.2 cloves of garlic 1 carrot,2 bay leaves and a sprig of tyme. bring to a boil reduce to a low simmer and cook down till reduced by 1/2. Now you have a no sodium beef stock that is full of flavor. use that as your gravy base.
To make the gravy bring a quart of stock to a low boil. mix equal parts no salt butter and all purpose flour together to make a paste and add to the stock and whisk till it is thick. If the flavor is a little flat add some red wine or a little red wine vinegar. You wont miss the salt.
