I recently bought a new chest freezer to hold Comp. meat. In the process of moving meat to it, we discovered a lot of things that we didn't know we had. It was a little like Christmas morning for a meat lover like me.

One of the things we happened onto was a pair of swordfish fillets.

Here's what I did with them. It was simple yet delicious. for any of you that have never grilled fish, this one would be an excellent first choice.

Vacuum marinated in balsamic vinaigrette:

I think a nice citrus garlic marinade would be very good as well.

On the grill:

About 3 minutes per side. Swordfish is not one that likes to be rare, but overcooked is not at all good either. Just grill it until it becomes firm and quickly remove it to a hot plate.

On a plate with some rice pilaf and a bowl of Lobster bisque:

I haven't had Lobster bisque in about 14 years.Snooty waiter at the Sardine factory on Cannery Row.Funny how some things bring back memories.:roflmaoha0:

Uh huh, they DO look good!
Citrus-garlic-lime marinade - leave it in long enough you have ceviche. Might be on to something. :shrug:
