View Full Version : Chantrelle stuffed deer heart

hello everyone

Today was the second time i used the drum smoker things went a lot better today then the last smoke i was real busy today so its nothing fancy i just threw everything into the drum and started smoking this weekend my son and i went out deer hunting and both of us got a spike deer nice tender deer for the freezer
i started the drum and made some stove top stuffing i mixed in some chantrelle mushrooms i also threw into the mix a couple of left over tenderloin steaks that we had for breakfast i stuffed the hearts with the stuffing and wrapped the hearts in bacon this really turned out great
i also did some pork country style ribs that we had left over and some eggs and at the last i threw on the rest of the stuffing to warm it up and put on a few steaks it all turned out great

Hmmm, very interesting. I'd for sure give it a go. I haven't seen the smoked eggs around in a while. Looks like you had a pretty good day.

Keep the smokes comin from that drum buster and congrats on the two of you draggin in a spike each.

I applaud your creativity with the heart, but I'm not an innards person. If I were, I'm sure it would be great. :D

i just took the raw eggs from the fridge and placed into the drum and smoked for 3 hours and pulled them out they are great i think they taste better after they sit in the fridge over night easy to do and taste great

Huey I'd go for a plate of that! Looks fine to me! Creative presentation.
Keep 'em coming. You add a different angle to The Joint and I like that.

How was the smoke absorbtion? I mean did they get a nice smoky flavor clear down inside?

the eggs are nice and have a great smoke flavor not over powering when you get them out of the smoker they are really hot and it takes a long time for them to cool off i like them better after they are in the fridge over night it brings out the smoky flavor

Once again, what temp and how long? and did you put them in cold?

I was thinking how cool would deviled eggs made from smoky eggs would be.

OH, BTW, how did the bear sausage turn out.

I just had some waterfowl sausage with jap and cheese made. It's great. Wanna swap a couple sticks?

i took the eggs out of the fridge and placed into the drum it was at a temp of 225-250 not real sure here my temp gauge is on the side at grate level it read around 200 i let the eggs go 3 hours i think they will make great develed eggs
the bear sausage turned out great is it cool enough to send some to ya now let me know

As for the sausage, we prolly ought wait til November or so. I'll try to put it on the calendar to drop you a PM and we can swap. I bet you'll like this stuff even if you don't like waterfowl.
