View Full Version : Saturday Grub at the Ranch

Cabinetmaker Curt got me fired up on the BBC thing. :msn-wink:
Actually, I was already "in progress". I had two whole chix marinating (not brining) since Friday afternoon. Had plans to do BBC using a recipe by Paul Kirk, KC Baron of Barbecue, "Smoky Barbecue Chicken". The recipe calls for marinating the chickens overnight in a really good marinade, then liberally applying his rub and grilling with indirect heat at 225-250F about 5 hours, spritzing every hour with a wine/apple juice mix.
I went straight with the recipe to the grilling point, changed to BBC on the drum running at 325F. Took about 2 1/2 hours. The chix were excellent!!! The marinade gives them an amber color and good flavor and the rub is tasty with a bare touch of heat.
Prepared some Southern Fried Green Beans and corn casserole for sides. First time for the beans, they are tasty. Have a little sugar in them and bacon. Next time they get a bit of minced onion. The corn casserole is a dish my Mom made for years and I have always liked.

Some pics - The marinade and rub make the chix look burned, they are not. Had great skin and flavor, very juicy.

Great color on the birds and some really tasty looking sides. My granny used to make corn caserole. That really takes me back havent had it in years. i would love to have the recipie.

Just did up a bunch of G Beans, vacd and froze. Will have to give that fried bean recipe a try.!!!!!

BTW Mike I was looking at the bottle of St. James trying to figure out what was going on in the label picture when I noticed the legs in the background. Those were too purdy to be your legs ... hope Mrs. don't find out about them :msn-wink:

It's a reproduction of a Thomas Hart Benton mural in the state capitol building in Jefferson City. Politicians addressing a crowd "way back when".
Pretty neat concept for the label using his murals.
Yeah, she knows.
