I just picked my first of many Serrano peppers, looks like I'm going to have quite a few, what should I use them for....what do they go with?
I was thinking about running them through the dehydrator and grinding them up for Chili powder.

I always wanted to try making a "fermented" tabasco like sauce, just never got around to it.

First off, let them ripen before you pick them.

Here is a recipe for what many think is the best table sauce there is. there are no preservatives in it so it really needs refrigerated.



4 lbs red serrano peppers
1 cup white balsamic vinegar

1/4 cup fresh lime juice (http://www.recipezaar.com/library/getentry.zsp?id=260)
4 tablespoons white sugar (http://www.recipezaar.com/library/getentry.zsp?id=139)
2 tablespoons ground cumin (http://www.recipezaar.com/library/getentry.zsp?id=20)
1 tablespoon salt (http://www.recipezaar.com/library/getentry.zsp?id=359)
6 large garlic cloves (http://www.recipezaar.com/library/getentry.zsp?id=165)

Directions



Stem serranos, and puree along with garlic in blender until smooth adding water if necessary to maintain puree.
Press puree through a sieve to remove seed particles.
Combine 40 oz. serrano puree with all other ingredients in bowl.
Work in batches back through blender, and strain again.
Bottle in sprinkle top bottles and refrigerate.

You can use the green ones, but the red ones are much sweeter, and adding sugar doesn't do the trick.

I make a batch of this every 2 years or so and refigerate it in quart jar, then fill a shaker bottle as needed.

If you take the time to make it, I think you will find that it becomes a favorite quickly.

How hot are they Brian? My first peppers of the season are usually pretty mild and gain heat as the plants mature. Serrano peppers should make some pretty warm chili powder. Let is know what you do with them.
