They had whole chickens on sale, so I picked one up for dinner.:wings:

Started with a 4 1/2 pound chicken

Spatchcocked and cut in half

Seasoned up with a new rub I've been working on. A chipotle - lime rub for chicken and fish

A squash seasoned with S&P, garlic and butter going in the smoker with the chicken

Going into the drum using pecan and apple wood. Smoker running at 325-350

Everything was good, chicken was nice and juicy, rub was good, but it still needs more tweaking. :msn-wink:

rub was good, but it still needs more tweaking. :msn-wink:


I think that there are several of of here on the Q Joint who should really be the judge of whether your rub needs tweaking. Hoosierland might be a good place to start. When you coming up so we can do our taste testing????

At The 325*-350* smoker temp, roughly how long did the cook take ? I wanna do up some chicken this weekend and have no idea how long it takes.

Around 1 hour. Give or take, depending on size of bird.

45 minute to an hour depending on the size of the birds.
