Been doing stuff and have been remiss on posting, so here's another sammie I whipped up a few days ago. Did it on the panini press also -
Brushed two large portabello shrooms with a mixture of two tablespoons EVOO, two tablespoons balsamic vinegar and two teaspoons kosher salt then grilled them until fork tender. Sliced them about 1/4" thick.
I had a ciabata so I sliced it into two layers. Slathered on some Miracle Whip. Then I put down a layer of arugula, 12-15 leaves. Topped that with roasted red pepper slices and the portabella slices. Put two slices of Swiss cheese on top of that and a layer of carmelized honey mustard 1015 sweet onions. Brushed the ciabata with butter and into the panini press at 350.

Another fine sammie, Mike. I would never think of putting a shroom in a sammie as the main act, but I'd try it.
