View Full Version : Spicewine fire grate and maze

SmokyOkie and Chargrilled asked how I fired up the Spicewine, so............

First off, no they are not gravity fed, Stumps are gravity feed.

When they are shipped they come with a flat fire grate like in this pic...

The ones I use I made, they call them a maze, but they are just a u-shaped basket. Go figure.:shrug: I have made a couple different ones of these. A fancy one with dividers........

And this one that I use most of the time......
the sides of the basket are 4" high. You just fill the basket as far as you need for the length of time needed for the cook. Filled all the way around the u-shape, I can get about 10 or so hour burn depending on how hot I'm running the smoker. You just leave a space at one end to hold about a chimney full of hot coals to put in when starting and then it will slowly burn all the way around the basket while cooking. On short cooks you can just fill down one side of the basket with as much charcoal as you need or just use the middle space of the u. I then just set wood chunks on top spaced over the length of the charcoal. This works good since it pre-heats the wood chunks and they light and burn instead of smoldering.


Tim, some times when I do a short cook and want to get the smoker up to temp faster when I'm only using one side of the maze, I put half of the lit charcoal on the charcoal side and the other half of the lit charcoal on the other side where I have just a little unlit charcoal. Just makes a hotter fire box temp for the first 30 minutes or so while the smoker is heating up.:D

I am familiar with the mze basket. In fact, I have toyed with retro fitting my Backwoods fire grates.

I was just windering about the two lines with lit coals on both.


Next, tell me about the airflow on the Spicewine. Does it just flow around the outside of the center pan?

BTW, I didn't think one could hijack one's own thread.
