Here's a duck I did on the Backwoods tonight.

I almost didn't take any pix, but when I brought it in and saw it in the light, I thought I should share it

Sorry for the lack of pre cook pix and the total lack of plated pix, all I can say is I was lazy first, then hungry.

Served with Viet style fried rice and chicken slaw.

Cherry smoke, pepper glaze. Simply recipe for the glaze, Mae Ploy spring roll glaze with a little Bhut Jolokia powder for spice.

Nope, storebought. Plucking ducks is a bunch o work. We just breast out the ones we kill.

sides, wild duck can;t really be cooked beyond med rare or it turns into liver.

375. slits in the breast skin and breast down for the first hour, then breast up and glaze for the last 20 minutes or so.

About 22 minutes per pound.

Looks great! Was never a duck fan until recently. Might have to try to cook one myself.

It's nothing to be scared of Jake. Cook, cook it correctly, try a bite, and if you don't like it, swallow the bite and do no repeat. the most you're out is a $12.00 duck.
