Thought you guy's might like this, dinner last nite....
Some leftover PP on a tortilla with some shredded taco cheese.

Topped with enchilada sauce and more cheese.

Some homemade Guacamole with lime juice, sour cream, kosher salt and Redhot

Plated with some refried bean's (with chorizo) and guacamole......kept it mild for the girl's!!

Them's some good lookin groceries Bubba. I feel like I could almost walk out on that tortilla and have a picnic. Thanks for sharing man.

Lord that looks good! Bet the smoky pulled pork gives it great flavor.

I made rollups out of PP on Tuesday night, but they didn't come out that good. What temp in the oven; were they under a low broiler?

Look like a little more sauce and some lettuce on top before serving too.

You can come cook for me any time you want Bubba. We had to suffer thru a cruddy boneless chicken stuffed w/ Italian sausage stuffing and crushed tomato pan sauce (sorry no pix, I got hungry)

Made these Thursday night. The only thing that I would change for next time would be to add more heat; Chipotle Tobasco and/or cayenne. Old El Paso needs more kick...

Made 5 with PP, and 5 with brisket. In to a glass baking pan. Did 425 for 10 minutes to heat the underneath and went to low broil on the top until bubbling; about another 10 minutes. mmmmmm

Ya Steve, that's about how i did it, made em for the girl's so no heat but they would have been that much better with some kick!! :D

Nice lookin' grub there Bubba! Much more authentic than the wife and I usually fabricate. We've gotten quite addicted to taken frozen burritos, cutting a slit in them and stuffing them with left over pulled pork and smoked swiss (a buddy of mine smokes the swiss.....I have yet to try it). It's almost like that left over pork gets better the longer it's left in the fridge. Probably more like it gets better as the left overs get smaller!
