Riccardo's Beer-Battered Onion Rings


Preparation time: 20 minutes
Cooking time: 15 minutes
Yield: 4 servings



INGREDIENTS:


Onion Rings

* 1 large Spanish onion, sliced into 1-cm (1/2-inch) rounds and separated into rings (if desired, set aside the small centre rings for another use)
* 1/4 cup cornstarch



Batter

* 1 cup pastry flour
* 2 tbsp cornstarch
* 1/4 tsp baking powder
* 1/4 tsp salt
* 1 cup pale ale
* Oil for frying



DIRECTIONS:


Onion Rings

1. Preheat the deep fryer to 190C (375F). Place a cooling rack on a baking sheet or line a baking sheet with paper towels.
2. In a paper bag or large bowl, toss the onion rings in the cornstarch to coat well. Set aside.


Batter

1. In a bowl, combine the flour, cornstarch, baking powder and salt. Whisk in the beer.
2. Using your fingertips or a wooden chopstick, dip the rings in the batter, 4 or 5 at a time. Shake off excess batter and deep-fry for about 3 minutes, turning half way through cooking. Drain on the baking sheet. Season lightly with salt. Repeat with the remaining ingredients.

Sounds good Jake......but I like easy recipes.:msn-wink: We really like b.batterd fish and rings. But I need help w/the recipe. It's a famous fisherman from a while back........80's-90's and he had a fish'n show on tv. I can't remember his name but the music that started the show was terrible. It was an organ play'n and the words were "gone fish'n, instead of just a wish'n". He has a flour "coating" for fish that is pretty good, I just added beer and it was a great batter. It's in a blue bag if I remember right.

That was really good, haven't had it in a while, but we really liked it.

Anyway, my memory is go'n......all started when I ate that wedding cake

Well, crap! Doesnt' work and after google it won't work there either. I did read a couple that said it can be found in Wal-Mart and Dillons stores if that helps.

another good one is zatarans, I just haven't tried a beer batter w/it yet. I'm guess'n that any fish fry coating would work, then again........don't ask someone from w.KS about fish fry'n when the closest lake is 1.5hrs away.:blushing: There is a lake about 30 miles n. of me.....but it's very small.....no wake type lake.
