Well, the Okette decided that sauced over pork steaks sounded good tonight. I though sammies sounded good, so we compromised and here's what we ended up with.

2 largely boneless pork steaks seasoned and bones removed.

Grilled over direct high heat and then sauced over same

Cut to fit (well kinds fit) the buns, and then dressed.

I don't take much beyond 150 so they don't dry out. Every bit as tender as any ham sammie you'll ever have.

cooking beyond 190 turns them to mush, if they aren't already way dried out.


What was your grilling sauce du jour?

Po' Boy's Squeal Sauce with a new prototype I have worked up. It's sweet smoky tomato base with a nice sheen. High sugar, so it glazes nice.

Just what I thought.
Never can be sure though. Could have been some sort of double whammy triple throwdown wasabi cucumber sauce or some such thing. :D

Good lookin sammie Tim:thumbs up: . We do a lot of sammies here. Had corned beef and cabbage for St. Pats and just finished the corned beef on rye. MMMMgood. What a way to finish leftovers. E.T.
