I thought I would share todays smoke. I'm smoking 3 front deer shoulders today, and 4 front shoulders tomorrow to take to Redbud Energy tomorrow for the plant hands. (They graciously gave me a PO for a BUNCH of work currently underway there on all 4 units).

First pic - It's a cold and dank day today in NE Oklahoma.

As the smoke began.

1 1/2 hours into the smoke.

2 1/2 hours into the smoke.

About 4 hours into the smoke.

I pulled them at 145F. They're resting now.

Love some venison....stay pretty moist with the bacon? Was that a total of about 4 hrs?

Tim,it took a lot of discipline. I'm doing 4 more today so I may have to sneak a little bite this time. :D

Upon edit: Today is one of those times that I wish I had a MUCH bigger smoker. At least I've now got an excuse to get one!

G'morning, Rob. Lunch went real well. The meat disappeared very quickly. I was going to take some ribs as well but WalMart was out of what I wanted.

I meant to get some pics during lunch but got busy with the customer. I'll ask my field superintendent if he got any and I'll post them if he did.

Boy Kev, those look like something tasty!
This fall I think I will have a couple shoulders out of the deer I get. We usually save the loins and a few roasts, grind the rest.
Missouri only limits you to the number of tags you want to buy, buy as many as you want. I usually do at least two, may up that.
