From Peculiarmike's info. we tried his and Fatback Joe's twist on smokin cheese early spring. Amb. temp was 52*, we ran temps up to 87* with some lid liftin!!:roflmaoha0:

Worked out to be the best smoked cheddar and Colbyjack we have ever had.

The CG worked great just like Mike said it would in his post, 4-5 coals will last ya bout 1:40 min which is long enough to impart great smoke flavoring. We added some small chunks/chips bout every 20min or so when the smoke was outta the chamber. What a wonderful thing to do to cheese to flip it over.

Any hoo on to the pics.

Ice bath

Pieces of cheese settin on top of foil over the ice on a small grill rack covered with foil.

Get smaller pieces of hickory in the application

Feed the lil briq ya got going

Lookin for TBS

For comparison reasons this is how small a fire ya wanna build.

As Mike had stated, keep yer exhaust choked a bit.

The goods, and man alive were they tasty, will be doing this quite frequently!!


Thanks for lookin, I flavor saved 1/2 to send to Dad as he didnt believe I could cold smoke on the CG!!!! :msn-wink:

Nice job.:thumbs up: Bet that smoke added a great flavor to the cheese. I would have had to smoke twice that much, cause I would have ended up snackin' that whole bunch before I could have saved any.:msn-wink:

Well! Nice looking rat cheese Trav! Your Dad will be surprised.
Goes good with some snack crackers, smoked baloney and "something cool to drink" :D :msn-wink:
You will want to do some more, vacseal it and freeze so you have some this summer.

Looks great, Trav! I've been wondering if that could be done...I love smoked cheese...
I guess I missed Mike's post about using the CG for cold smoking.
