Whew, we had a busy weekend of shopping and smoking!
Here we have a few slabs of spares that we trimmed up. Picked them up at Sams for $1.58/lb.
This is the only pic I have as they were consumed and portioned out as soon as they came off the CGSP.

I smothered them with my Jonesers Rib Rub that I created on the fly...I think I'm on to something...Sweet and Spicy is my preference.

Then onto the butts....
Picked these up at Sams as well...can't remember the price off the top of my head...
Here they are all slathered and rubbed. I used Joneser's on the little one and Plowboys on the big one. I think I like my rub over the PB for the pork. I hear it's the bomb on a brisket though.

Great looking butts! Hope they tasted as well as they look. By the way, did you remember to use SoFlquer's finishing sauce? IMHO, it really makes pulled pork. :eating:

Peculiar Mike and Peculiar Jane cmae to visit over the weekend. We did not get lazy. We spent the weekend eating, sleeping, going to the gun show, eating and sleeping. Nope, nobody lazy around here!:roflmaoha0::msn-wink:

Pretty vinegarish stuff to me. I know a lot of folks like it, but I'm not real into pickled pork.

If you have the recipe, why don't you put your name on it and ask admin to stick the thread. I bet they would.

Yeah, I used a modified version of that....
For the amount of Butt I smoked... I Doubled it.

Joneser's Pulled Pork Finishing Sauce
3/4 Cup Apple Cider Vinegar
1 Tbs White Pepper
2 Tbs Dark Brown Sugar
1 Tbs Red Pepper Flakes
1 tsp Tony C's Creole Seasoning

Heat the vinegar just enough to dissolve the brown sugar. Stir in the remaining ingredients. Pour over pulled pork and mix until the liquid is absorbed. Enjoy.

I like it a little hotter....gives a good finish.

Great looking grub! Hard to keep up with the Jones'es!
I prefer Blues Hog Tennessee Red BBQ Sauce.
Each to their own.

That is a Carolina style vinegar sauce.

A lot of folks use an Oklahoma style tomato based sauce like Head Country as well.

One of my faves is Blues Hog Tennessee Red which is a way sweet vinegar sauce, and then for something totally original and delicious, there's Po'Boy's Sauce.

Ingredients
1 cup yellow mustard
1 cup white sugar
1 cup water
1/4 cup ketchup
1/4 cup dark brown sugar
1/4 cup cider vinegar
1 tablespoon liquid smoke
2 tablespoons paprika
1 teaspoon white pepper
1 teaspoon black pepper
1/8 teaspoon ground cloves
2 tablespoons butter
1 tablespoon soy sauce
Directions

Combine all ingredients except butter and soy in saucepan.

Simmer 30 minutes stirring often.

Add butter and soy.

Stir until butter is incorporated.

May be tossed into freshly pulled pork, or used on pulled pork sandwiches.

To build the perfect pulled pork sandwich, put a slice of onion on a slice of white bread, add a layer of pulled pork, drench with sauce,repeat, cover with a slice of white bread, then pig out,mmmmessssy, but delish.
