well been holding out on everyone long enough. with being gone fishing and some other stuff happening i never got to smoke these until today. i got them the week after i got back from fishing. this awaited me when i got home from work.

opened up, frozen solid with dry ice. i put staight into freezer till i could get to them.

fast forward to today, nice ribs, all i had to do was strip the membrane off.

the rubs i used today, on the left my homemade basic paprika/brown sugar/salt/pepper/cayenne rub, center is something i picked up at a new store last weekend, they call it peri peri, is from africa and is hot stuff. my first time using it. and on the right is some rub sold by sams, i jazzed it up with a bit more fresh ground black pepper.

top rear is the basic, top forward is the peri peri, and the lower one is the sams rub.

smoking 225-250 deg and using my usual cherry wood. smoked two hours and into foil with a little apple juice. back in smoker for about another hour. back out of foil and looking close, will see if i can hold out for about an hour yet. i missed a pic in here someplace but they are done, brush a little sauce on and eat in 15 min.

here they are off the smoker, note, pix were second today. if you look close see piece a the top one gone. guilty!!!

plated with pepperoni portabella, and garlic bread with basil dipping sauce. got that same place as the peri peri... that some hot stuff but has real good flavor.

Erain, that's very nice. I don't think the prize could have gone to a nicer guy. You deserved them, too! Job well done.

Those are about as fine looking ribs as I've ever seen. Glad you won. You certainly know what to do with a box of meat!:kewlpics:
