View Full Version : CharGriller Duo Cluckers & Baloney

Fired off the Duo, gas grill & smoker. I did four beer butt chickens on the gas grill side and two sticks of Frick's bologna on the smoker side. Painted the cluckers with EVOO and sprinkled with Happy Holla Rub. Smoked one stick of baloney plain and one coated with Cowtown Sweetspot Rub.
Had to do the cluckers in pairs, my beer butt rack is a two holer.
Beer butt chicken is so good, one of our favorites. We ate one and the other three we picked all the meat off and vacsealed in portions for future use in quesadillas, etc.
The baloney is for snacking and sammies. It eats fine with some smoked cheese on a snack cracker with "something cool to drink" :msn-wink:

Cluckers on the grill, used the right burner only for indirect heat, works great. Hickory for some smoke.

Oh that looks good, Mike. I have yet to try beerbutt chix. I hear I'm missing out. I have them on my radar though.
Well....I haven't tried the bologna yet either...I'm missing the bus here! I gotta start a list!

Now, on the duo. chix were fired at what temp and added wood of what??

Never did see the Fricks, that is our one and only smoked baloney!! Scored? I am lovin the rub concoctions!! Lets get some insight,.. What I do know is that I am going to havta squirrel hunt your property with all them hardwoods in the back drop!!!

Trav, if you check the pic of the Duo you can see I blocked off one of the exhaust stacks with foil. That held more heat in since I was only using one burner and got it up to almost 400°F, about 380° or so. I never cook poultry of any kind "low & slow". Gives nice skin too.
I used some hickory chunks for a bit of smoke in the grill and also smoked the baloney with hickory.

Now, about them apples -

2 large Golden Delicious, Fuji, Braeburn - that type apple, cored and thin sliced
Melt about a tablespoon of bacon grease in a skillet over medium heat
Add apples and cook down, stirring, until limp
Add 1/4 cup brown sugar and 1/2 teaspoon cinnamon (adjust to your taste as needed)
Stir until brown sugar is melted and bubbly

That Chargriller Duo sure did you a fine job Mike! I had mine fired up last weekend for overflow from the drum. I like your chicken rack too. I need to check into one.
