Dang, I haven't posted any food forever. So, here it goes. My ex-wife (officially on the 19th) wanted the digital camera so I said sure then went and bought myself a new one. The side of my smoker firebox was burnt out and i got it fixed Saturday, she's keeping that too (new one already ordered, lol). What bettter opportunity to break in the rejuvenated smoker and test my new camera at the same time. So, here it goes, yesteray evening I ran onto a porterhouse steak on sale so I picked it up with a small pork butt and some jalapenos and a 1 lb roll of bologna. I quickly smoked the porterhouse and a 1 lb roll of bologna before we left for Tulsa, no pics because it didn't last long (I know, didn't happen).

When we got home it was time for the pork butt and abt's. I coated the pork butt in Jeffs rub then sauteed some onions and bacon for the abt's. Once sauteed, I cooled it down and mixed it with the cheese then used it to stuff the jalapenos. Well, here are the results. I only smoked the pork butt for about 4 hours yesterday, wrapped in foil then finished it in the oven at 250 today for another 5 hours or so. Here are the final results with a picture of our (her) 2 boxers for good measure. Thanks for looking!

Thanks. It was nice to be able to fire her up again. I'm doing a prime rib later in the week. Available time will tell if I do it on the smoker or in the oven. Either way it will be delicious.

If you do it in the oven, try starting @ 450 for 20 minutes, then turn down to 250.

Will do Smoky. Don't figure it will take too long. It's probably about a 4-6 pound roast and I'm only cooking it to 130-135. You know I'll post pics since the camera is up and rolling!

Pulling it @ 125 and resting to 135, or overcooking it?:roflmaoha0:
