This is one of my favorites. Great finger food for kids and adults. You can make a meal out of them or use them for appetizers ( cut in half or bite size pieces ). Anyway you serve them, just make sure you have your dipping sauces handy.:drooling:

tenders all cleaned & prepped.

give them a dusting of your favorite rub or seasoning

All wrapped up and dusted with some more rub or seasoning

I smoke them at around 220* for around 2 hours ( give or take alittle-til done ) with apple and pecan wood

Please pardon my food A.D.D. moment, but what if you split the chix meat first and put a sliver or two of Jalapeņo and onion in it?

Why not??? It would be similar to a bacon wrapped chicken roulade, only in a mini version. Wouldn't even have to split it all the way, just cut a pocket in them and stuff the pocket. :drooling:

Have you ever done German style rouladen, the kind with the dill pickle and mustard?

Yep, have done them with beef and pork, and don't forget the slice of bacon( on the inside ) and onion.:thumbs up:
I have seared them, then roasted them with with some carrots and celery, then served them with a hot German potato salad.:drooling::drooling:

I have done the pickle & mustard rolled inside thin sliced ham, then wrapped in bacon.

I have never done one, but I'm told they are very good using venison.
