1st time taking a wack at it. Turned out pretty good.
Used apple chips in the ECB . Let it smoke about 1 1/2 hours. Held a temp of 77*.

1 pound sharp cheddar
1 pound mild cheddar
1 pound swiss
1/2 pound of gouda.

Looks great Alan! I see Josh got the urge as well. Seems like there's something about Feb and March that makes folks want to smoke cheese.

As to the hickory chunk, I wonder what would happen if you apple smoked some cherry chips and then smoked some cheese w/ them.

Sounds like you had a tasty smoke session. I think smoked Gouda is the bomb!

Edam as well.

Anybody ever smoke any softer cheeses like port salut or brie?

Heard about it, saw it on TV or in a book, never IRL, on my "to try" list.

mmmmmmmm

All you need now is some fried taters and chopped up smoked sausage to top with that cheese.
