I like the Bad Byrons. Good stuff! I'm not familiar with the Wild Willies though. Let us know how it all turned out.

You picked a beautiful day to be out on the smoker. It's supposed to be close to 70 here today. :thumbs up:

No I'm not that lucky. Had a pot of coffee. Went to store and bought a another butt and prepared it for buckboard bacon. I had a wild pig ham come out of cure yesterday and it was a lot better than I though it was going to be, so I cooked it last night. Had some for breakfast this morning. Still don't like the taste of wild hog, and I want some buckboard bacon. Now its in the frig waiting for the tenth day.
Wild Willy's Number One-derful Rub is from the Smoke and Spice by Cheryl and Bill Jamison.

Ok, here we go. Happy with the out come. The kingsford comps preformed very good, with one slight glitch, when I shook the drum it spilled the fluids out of the defuser plate on to the bricketts, my bad. Here are pictures.

Butts are my favorite to smoke, so easy and damn tasty.
Which of the rubs did you like, or have you had them both before?

That was the first for the butt rub, it surprise me, had more heat than I expected. Will be using it again very soon. The Wild Willy's been using it for about a year and love it on pork, but that's about it. Took the pulled pork to a super bowl party yesterday, didn't get to bring any of it home with me. Make you feel real good to have everyone bragging it up.

Buzz you say you are going to stick with lump. Do you like using lump n your drum? I havent had much luck with it in mine. Everytime I have to lift the lid I get a bon fire and it takes a while to settle back out and not to mention bad smoke.. I may be doing something wrong. I just have the lid off long enought to spray and it goes back down..

Well they say, if your lookin your not cookin. And I'm lazy by nature, so most of the time I don't lift the lid unless their is something catastrophic going on. I use a defuser in my drum so I don't have to turn anything over. Also I don't spray. If anything I'll inject.

How high is your defuser from the cooking grate? I dont lift lid but maybe once or twice during a long cook. Can you explain you defuser or send me a pm or pix of it? thanks.

I just measured up 16" and put another grate and put a 16" bottom from a planter wrapped in foil. It takes a little longer to come to temp, but it seams to even out the temp across the top grill

Not fair Buzz. Seeing this first thing this morning and I have to go around all day :drooling::drooling::drooling:. I hate wearing a bib.

Looks real tasty. On my list for a future cook as soon as I get the freezer down a little, MaMa's words:shrug:. E.T.
