This is an easy salad, you can really add any veggies or leave out any veggies that you want to. lol

I use 1 cup of cactus...cleaned, sliced and parboiled. You can use canned or pickled...just rinse first.

I like to add black beans (drained and rinsed), 1 cup of corn, minced onion, minced garlic, cubed jicama and tomatoes...

The dressing is
1/3 cup of red wine vinegar
2/3 cup of light oil
1 TBS dijon mustard
salt and pepper, onion powder and garlic powder to taste....

Mix well and chill....that's it! :D

i never had had cactus, whats it taste like??? i don't know if i could even buy that here:shrug:

Jake, you can usually find it in the Mexican food asile. Sometimes it's labled as "Nopales"
I tried it once and thought it was OK....I guess I have to be in the mood for it.
But that salad sure looks great!

Did ya get any stickers in you tongue for eatting it? Everytime I touch a cactus I get stuck :D.. nice lookin dish jeanie... :thumbs up:

Not only does it look good anything about cactus or desert or anything involving warm weather sounds good. Middle of winter here in Wisconsin, -13 here and I am sick of it. cant hardly go outside much less cook outside:ack2:

I use the cactus about like a green bean...it doesn't taste like a green bean though. lol I can't describe the flavor, it's mild. (sorry, not much help :D)

Looks great cowgirl! we got plenty of cactus around here, we take it strip it rub a little evoo on it grill it along with fajitas ...sho good eatin...:thumbs up:

I love nopalitos. I like the textuer and flavor both better than green beans.

For thosae of you wanting to try it,you can find it both fresh and canned pretty much year round in your local mexican food store. If you go to one where they sell a lot of it you can get it with the neddles already removed.

Treat it the same as you would french cut green beans and you'll do well.

Jeannie, I never thought to use it in a cold salad.thanx for sharing!
