View Full Version : Prudhomme's BBQ Sauce

Can't remember what thread that I read it in, or who asked for it, but someone was asking for this BBQ sauce. Found this in an old stack of recipes that found their way to the bottom of my file drawer. It says that it is from Fred Towner's collection. If anyone is interested, here it is:::

DRY SEASONINGS----Makes 5 cups.

1 1/2 tsps. Black Pepper
1 tsp. Onion Powder
1/2 tsp. White Pepper
1 tsp. Salt
1 tsp. Garlic Powder
1/2 tsp. Cayenne Pepper


1/2 lb. Bacon, minced
2 C Pork, Beef, or Chicken broth
1 C Honey
5 tb. Orange Juice
2 tb. Lemon juice
2 tb. Minced Garlic
4 tb. Unsalted butter
1 1/2 C. Chopped onions
1 1/2 C. Chili sauce
3/4 C. Dry roasted pecans, chopped
Rind and pulp from 1/2 Orange
Rind and pulp from 1/4 Lemon
1 tsp. Tabasco


Combine the dry seasonings and set aside.

In a 2 qt. saucepan, fry bacon until crisp. stir in onions, cover pan, lower heat and continue cooking onions until dark brown being careful not to burn, 8 to 10 mins, stirring occasionally.

Stir in dry seasonings and cook for 1 min.

Add the stock, chili sauce, honey, pecans, orange juice, lemon juice, orange and lemon rinds and pulps, garlic and tobasco, stirring well.
Reduce heat to low; continue cooking about 10 mins, stirring frequently.

Remove orange and lemon rinds.
Continue cooking for about 15 mins. to blend flavors. Add butter and stir until melted. Remove from heat and let cool for 30 mins.

Pour into food processor or blender and process until bacon and pecans are finely chopped.

This sauce may be used on bbq chicken, pork, or ribs.

i have not but im off Thursday, just may be the day im thinking already of what to cook
