Hey here is my 1st attempt at buckboard bacon,,,cured with High Mt cure..
I used pork butt....boned it out and cure applyed.



Cured in fridge and in plastic bag Ziplock gal size.Smoked with Apple and a little cherry wood and probly pecan if i rember right...lol


Fryed it up big hit here...not salty at all...
It was great and i vac sealed the slices up before we ate the whole thing up.lol

Looks great, was the fat similar to regular bacon fat? Great Job!

What I have been told that the bacon dont take the cure like Meat does but it had a bacon flavor to me cured and smoked...I had about 5 hrs of cold smoke didnt get over about 100* tryed to keep it below 90* but to be honest had a few spikes smoked it in my GOSM with wok mods and small lump and apple and cherry,,,, and small pecan on the other half....

Good lookin bacon.

I can just see a plate of that fried up with a couple over easy on top and hash browns on the side.

:blushing: being new to smoking, im not sure i understand cold smoking, anyone got a cold smoking for dummies handbook :msn-wink: honest im not sure i understand? i need to get this, because i need to make my own bacon :drooling: :drooling: :msn-wink:
