Thanks for checking out my evening. I still have some Shrimp and Scallops I am going to put on later. Man what a hodge pog of a meal but heck I like it all. I even though about a fattie but I am going to hold that till next smoke. Will update closer to the end. The wood of choice is maple and oak (thats all I had)...

good lookin smoke Dot!

I do see a therm probe on the grate. I would put that inside a wood block or something to keep it away from the metal cuz it conducts the heat differently that the air temp inside. On my Lang, when the Dial therm says 300. its usually 235-240 on the probe on the wood block on the grate. I wonder if yours is higher because the probe is on the grate?

Good tp see ya smokin on the new toy. I wish I was, mine still under 20 inches of snow.:blushing:

Yelp you were right. The door thermometer is 335 and my maverik is 288. So there is about 47 deg difference. I do have it on the firebox side, I assume is is cooler on the opposite end but I havent checked yet.. :sign0092:

Yep, I figured as much, I do chicken in my Lang at 350-400 on the tel-tru dial, which is usually about300-325 on the grate probe.

Yes the far end is cooler, and the top shelf is at least 10-15 degrees warmer on mine. I also fiddle a bit with tongue hight, but you can't do that very easy!

Glad ya found out the real temp, you owe me a drumstick now!:msn-wink:

Great lookin stuff dude!

For the thermo probe, I just stick it through a tater ( thermometater mod)then eat the tater when it's done and get a new one.

BTW- that is one huge busty bird!

Ya know, the hodge podge is a prollem when you get a bigger smoker. Realistic quantitiies just look so lonely.:msn-wink:

I used to use the spuds too, but I just wanted to try the wood block, I just seem to like it better. I don't eat the spud after anyways, 12 hours of smoke on a tater is a bit much for me!:ack2:

Randy those shrooms were I think the best I have ever had. I wished I had got a pix when I cut it in half but it didnt last long. I only done 2 the see how they would do, next time there will be a bunch.

Tigman the wood block deal is just a piece of wood with a hole drilled in it and you temp probe stuck thru it. I had the clip that came with my maverick holding the probe and it conducted heat throwing the thermometer off. It was showing a higher temp, the accurate temp was lower. Hope that makes sense. oops didnt see dans post.. :whathesaid:

I just change taters and eat them as they come done.

In the Backwoods, I just hang the probe through the grate a couple inches.
Since the temps are so uniform all the way throughout it reads real well.

Half a dozen bacon wwrapped redskins between a couple people over 14 hours doesn't seem unreasonable???

Have you ever smoked a buch of redskins and then made tater salad out of them?

Hey that is a good thought.. Smoked tater salad.. Tonight I had chicken caserol made with the left overs from friday night bird tanning :wings:..

Dammit, I feel an A.D.D. attack coming on......

What if you wrapped some redskins with thin sliced bacon and smoked 'em, then cooled em, chopped the double smoked bacon and quartered the bacon grease soaked taters..No, wait, then grilled some slabs of sweet 1015 onion with some olive oil and ground red chili on it just to tendercrisp, then chopped them and made tater salad with all that.

The next question is cold or hot tater salad, and creamy or oil based, or maybe even cheezy? The possibilities are endless. It could even be better with some chopped smoked nuts as well.

BTW= I have done smoked tater salad a couple of times.

Jake the wifey likes a boiled egg with her greens and yes I used the DrPepper in the can the bird was on then cut up some apples in the pan then poured the rest of the Dr Pepper over them. The shrooms was a big plus. I think I am goin to start doing them like most do ATB's, have some everytime my baby is fired up...
