Sunday dinner Chicken seasoned with butt rub. Some abts, armadilla eggs, pig candy, boudin and baked potatoes. Done on uds at 275 for about 2.5 hrs with lump and pecan.

2 1/2 hours sounds like an awful long time for leg quarters and sausage links. Do you mean that everything was in there for that length of time, or that the total time cumulative was 2 1/2 hours?
