That's the name Pam ( my wife ) gave them. :D These are great for appetizers, snacks, breakfast, or anytime. These can be cooked in the oven or ( my favorite way ) in the smoker. Throw a pan or two in with your ABT's or fattys for an extra treat. The smoke flavor adds just that something special to these. Serve them up with dipping sauces and watch how fast they disappear. I guess they are technically a type of Quiche. I adapted a recipe to work for cooking these mini bites.

Start off with mini muffin pans. They need to be greased

make a soft dough

Take a rounded tsp. of dough and put in each muffin hole and form it up the sides and bottom

now add the meat of your choice. these were crab cause that's what Pam wanted.

Now mix the egg, 1/2 & 1/2, onion and spices. whisk together.

Now pour approximately 1 1/2 tsp of the egg mix into each muffin

now put shredded cheese of your choice on top and put into oven or smoker

hot out of the oven or smoker

Two of my favorites are pulled pork or beef with hot pepper cheese or pizza dough with Italian sausage and Mozzarella cheese and a marinara sauce for dipping.:msn-wink: Let your imagination run wild with different combos.:wings:

Here's the recipe I use for these.....

Two Bite Delights


1 1/4 cups Bisquick ( see tips )
1/4 cup butter or margarine, softened
2 Tbs boiling water
1/3 cup finely chopped meat or seafood
1/2 cup half-and-half
1 egg
2 medium green onions, thinly sliced (2 tablespoons)
1/4 tsp salt
1/4 tsp ground red pepper (cayenne) or your favorite rub
1/2 cup shredded cheese of your choice

1 Heat oven to 350F. Generously grease 24 mini (1 3/4x1-inch) muffin cups with shortening or cooking spray.

2 In small bowl, stir Bisquick mix and butter until blended. Add boiling water; stir vigorously until soft dough forms. Press rounded teaspoonful of dough on bottom and up side of each muffin cup. Divide meat evenly among muffin cups.

3 In small bowl, beat half-and-half and egg until well blended. Stir in onions, salt and red pepper. Spoon 1 1/2 teaspoons egg mixture into each muffin cup. Sprinkle cheese over tops.

4 Bake about 20 minutes ( about 35 minutes in the smoker ) or until edges are golden brown and centers are set

5 Serve with your favorite dipping sauces.

6 Cover; refrigerate any remaining appetizers. Leftovers re-heat very well. If you have any.

Servings: 24
Preparation time: 30 minutes

Cooking Tips
Vary the cheese you use for different flavors. Cheddar and pepper Jack are great choices

Use different meats and seafood. Chopped beef, bacon, ham, pulled pork, pulled chicken, crab, shrimp, or whatever you like

Crust can be also be made from pie dough, pizza dough, phillo, or pastry dough. They all work good.

Over the top as usual Jim. I really want to tryu those ut I know if I make them I'll eat a whole pan myself. I got the recipe copied for when the kid comes to visit.
