View Full Version : Cooked up some spare ribs for the neighbors

Cooked some ribs today for the neighbors that put up with me all year long and also help to watch over the family when I'm out of town.
I was going to also throw on some sausage for them, but I forgot to thaw it out. Might fire up the pit again in a couple of days and have a second round of the giving.
Nothing special, just some spares. I trimmed all but one to St. Loius style as I normally do. I left thinnest rack whole. It's been so long since I cooked an untrimmed rack I decided to try it again.
That's my youngest helping rub up everything. I cooked the trimmings and gave them to my Dad and brother for beans... The last pic was my portion of the untrimmed rack.

Mighty fine, James. It looks like you had a great day on the smoker! You've got a beautiful little helper, too. I'd be proud to be your neighbor.

Thanks everybody! Got several good reports back from the neighbors, so I'm feeling all warm and fuzzy... or maybe it's the Woodford Reserve?

Hey LoneStarTom, I bet they would be tastier coming off a new LoneStar pit! Still saving my pennies ya know...

SmokeyOkie... The untrimmed rack turned out great as well. I've just like the way a trimmed rack looks and slices for serving. Those trimmings don't go to waste either! :) (and I'll skip to thumbnails next time!)

the ribs look great, and you have a good looking helper too, what did you use for a rub and the sauce?? can we make a rule to post pics in the big version im a little blind and lazy to click every pic :msn-wink:

Yeah, but the knuckle is the best part of the rib, and it's a whole bunch better if it's still attached.

what did you use for a rub and the sauce??

Rub on the ribs was Texas BBQ Rub, original blend, really good stuff! On the trimmings I used Sucklebuster's Hog Waller... Also really good stuff!

No sauce or glaze.
