I just discovered this fish. its way good! here is how i have prepped it so far. Its time to experiment on the smoker with this

2 Basa Filets
2 small shallot
2 cloves garlic
3 to 4 tbls butter.
2 bay leaves
½ tsp sea salt
Fresh ground Black Pepper to taste
¼ sweet white wine
¼ c crushed almond
1 peeled and sliced apricot
1 peeled and sliced red Anjou pear


Heat a medium sauce pan up and melt the butter. Fine chop the shallots and the garlic and sweat them for 3 min. Add the almonds and fruit and the bay leaves. Sauté for 4 min. Season the fish with the salt and add to the pan. Put under a 450 broiler for 4 to 5 min. (till it gets flakey ) and remove. Remove from pan and set aside. Put pan back on stove top under a medium heat. Add white wine to deglaze. Thicken with Corn starch roux if so desired. Serve with Wild Rice.

Isn't that like a Asisn Catfish? I haven't seen that around here....

I've heard a lot about Barramundi but always figureed I'd have to go to the down under to be able to try it. Actually heard more about it's value as a game fish.

Now that I see that they're farming it here, I'll have to seek some out.
