I always hate to see a good bird carcass go to waste, and they're usually in abundance this time of year so I make stock.

I had 2 turkey carcasses and a goose carcass. Qpoke and I picked all the meat off them either as soup meat or sammie slices ( of course we didn;t snack on it as we picked :roflmaoha0:)

Then I smoked the bones with apple and plum @ 400 for about 3 hours


Then into a stock pot


Add the veggies (very coarse mirepoix)


Then the spices and herbs


It'll boil for about 6 hours to extract all the goodness fro the bones and liquefy the veggies, then I'll reduce it to about 1/3 of what it is and save it for making soup.
