Hi everyone..... well it was my night yesterday to make supper because it was my day off........I had decided to do the stuffed chicken breasts again but with something different inside. everything was going ok until the school called to say my little one was sick and i had to go pick him up :ack2: ~ poor little bugger. Anyways at that point between taking care of him and doing 7 loads of laundry on my day off supper wasn't quite as good as the first time........here are the pic's

the items of choice

here they are as i put them on the grill....this time i didn't wrap them in bacon (i cheated because of all the other stuff going on :blushing: ~ they weren't as good....I guess that's what I get :smack:)

i decided to marinate the carrots in roasted garlic balsamic vinegar and then cook them until it reduces into a thicker sauce....

here's our plates.... the carrots turned really dark from the balsamic vinegar but they were really *****....

so that's it for my supper....as i said before the chicken wasn't quite as good without the bacon wrapped around it but o'well you cook and learn..... I came home early from work today because my daughter is sick now ~ ugh!!!!! I'm going to try to think of something to whip up for supper...I'll keep you posted!!
See ya soon

Pip, that all looks great! I've yet to try the asparagus in the chicken, but I plan on doing so soon. Right now, I've got a turkey breast in the smoker. I didn't use bacon either, but I'm sure it will be fine.

I love bacon! I vote for bacon flavored toothpaste! :roflmaoha0:

I'm sure the turkey will be great :thumbs up: I think if I had smoked the chicken the outside might not have seemed so dry. You seriously have to try the asparagus in the chicken , it is sooooooo good. I think i would add that every time no matter what else i put in it.
I love bacon too :wings: .... i think they sell a toothpaste like that in the petfood aisle of the store i work at .......obviously it's for dogs but who knows maybe it tastes good ... if i send you some will you try it :roflmaoha0::roflmaoha0::roflmaoha0::roflmaoha0:

My only question is "Why would you put something GREEN in chicken?" We THROW THE CHICKEN AWAY here when it turns GREEN! :roflmaoha0:
Put some cheese or something to harden the arteries in there. "Do ya want to live forever?" :msn-wink:

Ok, so I am kidding! Does anyone have the complete formula for that chicken titty? I know it is in the archives somewhere but I really don't have time to go walking through the caves with a torch in my hand looking for old scrolls that someone has pushed into holes in a stone wall!:tap:

Thanks!

I believe the official formula is to pound the crap out of the chicken until it's flat , stuff it with whatever you like (this time it was ham, asparagus and swiss cheese...last time I chose herb & garlic cream cheese and asparagus) wrap them in bacon use a toothpick to secure and throw it on the grill. Hope that helps!! :msn-wink:

Looks great Pippa, you got me :drooling: again!!!! Going to have the wife look at this one and try it next time. I will probably drum smoke it but other than that use similar stuff. The carrots are awesome!!!! I wish she would eat cooked carrots. May have to make them when she makes a salad!!!

What was the ratios for the vinegar, garlic, carrots, how long cooked down?

Thanks for posting Pippa!!!:thumbs up:

That's too funny... Jake hates cooked carrots too. I make them for the kid's but I always make corn or beans for Jake but this time i thought maybe he'd like them...he ate them all and never said he didn't like them  , they're probably not his favorite but that's ok. As for the ratio, i'm honestly not sure I just marinated them in about a tablespoon of garlic and some of the garlic flavored balsamic then i added a little bit more garlic and maybe 1/2 a cup more balsamic.... I cooked it until it was all thick and syrupy and then added a bit more balsamic and did it again. the carrots were quite cruchy when they were done. I liked the crunchy texture but you could cook them longer if you wanted them a bit softer. Hope that's helpful :blushing: Let me know how they go over in your house :thumbs up: :msn-wink:

Hey Pippa... Looks good!!!

I was thinking of doing some stuffed chicken breasts last night but my wife had other plans so we ended up shopping, etc and ate out instead.:tap:

She is fixing our Thanksgiving dinner tonight so it may be a few more days before I can do the stuffed breasts.
