Well, after seeing Pippa stuff her chicken breasts, I decided to try it was well. Stuffed them with cream cheese and some onion slices. Came out really good except next time I will add some jalapeno.

Pippa, my family gave your idea a thumbs up! Thanks for the idea!!!

Here are a few pics...

Flattened the breasts out. Put a few onion slices and some cream cheese in em, rolled em up then wrapped in bacon.

On the grill with some country style ribs. Those ribs were a joke. Dont think that I'm doing those again...

U sure got long ones.

What was wrong with the CS ribs? They looked great to me. I always just love a good chunk'o'pigbutt meat

They ended up being boneless, full of fat and no flavor at all. Just wasnt happy with them.

The chicken was great though! :thumbs up:

Chicken makes such an excellent blank canvas for one to paint whatever one's mood is, doesn't it?

I've made these in the past. After flattening the breast, i would put a layer of ham , and onions peppers and cream cheese and roll them up nice and tight and toothpick in place. Kind of a smoked chicken cordon blu .
on edit(I also put a slice of mozzarello cheese in the mix)

I spose you could also use a little ham and Swiss and make a kinda grilled Cordon Bleu

:thumbs up: So true, you could put almost anything in there...the possibilities are endless which is great because it can make something seem new every time you make it :msn-wink:
