Smoking a precooked ham. Got it rubbed with honey, real maple syrup, ground cloves, ground mustard, ground red pepper (just a little), ginger, and a little paprika. Smoking with cherry and pecan. More pics later.

Be sure to go light on the smoke as it has already been smoked.

You'll only have to take it an IT of 140:msn-wink:

Whats up with the pan???

Pull it out and set it on the grill for better bark and smoke. :shrug:

Bubba, the pan was only to carry it out to the smoker.

J, 140 is a 10-4

6 hrs to 140 @ 250. Took a taste, but it wasn't there yet. Let it run 2 more hrs to 155.

Froze the bone for some good ham and beans later, and kept the fat I trimmed. Thought I might use it to put a good season on the new drum. What ya think?

The more fat you render, the better the seasoning. High temps seem to work best for that for me. 325-400
