Its busy time again.

All these kids activities. Summer is definitely over.

Didnt even have time to babysit chicken on the grill, so we went with foil packs.

Foil, sliced zuccini and yellow squash, red/green bell peppers, little evoo, then a boneless skinless chicken breast, sliced 3 slits sidewise, tucked in fresh mozarella slices, then ground pepper and wrap.

Threw on the gas grill for 35 minutes.

Beauty of it is that all the chit on my cast iron sub grill grate was burning off (gasser used for cheeseburgers and stuff that leave a ton of chit behind) and smoking like crazy, but the wrapped chicken was well protected from the acrid smoke.

Saved me time for this weekend, as I sometimes turn on the gasser for an hour just to burn the chit out, then get out the scraper.

The chicken was good, maybe a little bland, but a little Tony C's kicked it up. It was more poached than anything else.

Still, a good time saving tip.

Not even the 1/2 eaten pic? Man you are slipping.

All that BS aside, it sounds like an easy weeknight quality supper. Thanks for sharing it........I tend to not think like that and make chit harder than it needs to be.

I did stuff like that when the boys were young and we were busy. Glad that's over. I've done the squash and veggies like that recently, but haven't thrown the chicken in the mix. Good tip Bill :thumbs up:

So was all the food together in a big pouch or was it in meal size portions?


It can be fun to make things like that in meal size so you can customize the spices/sauces.

We called such things "tin-foil dinners" or "hobo dinners".

Individual

9yr old balked at the veggies and mozzarella, so she had hers with Sweet Baby Ray's in her pouch.

Sometimes I do just a big foil pack of veggies for a family style, but I do like the individual packs to add hot sauce to mine when they have complete meals in them.

Hobo Dinners, thats a good one.

I think I'll adopt that name for them too.
