Chipotle Smoked Peanuts

I wanted to try, one last time, to smoke some peanuts, the last three times, over the past years, were not screaming successes. I often ended up with something that looked like coffee beans the damn things kept cooking even after I had removed them from the smoker. I even tried once to put them in ice water after the smoke to stop the cooking I do not recommend doing that ! I think that I was trying to smoke them at too high a temperature.

This time I searched for recipes and smoking temperatures before starting.
Amazing the differences you can find on the web !!!
For example, smoking temperatures :
225F (107C) 325F (163C) no time indicated ?
250F (121C) for 10 minutes !!!!? no way can peanuts be cooked in 10 minutes !
250F (121C) - 325F (163C) - no time indicated ? - and that is a pretty big spread
300F (149C) - 325F (163C) ? for 40 45 minutes, stirring every 10 minutes, until the liquid is absorbed and the nuts are light golden brown.

I decided to try to keep the temperature around 230F (110C) and checking and tasting every 10 minutes.
At the end I bumped the temperature up to 277F (136C) for 10 minutes.

Statistics:
Minimum temp : 198F (92C)
Maximum : 277F (136C).
Average : 230F (110C)
Smoked for 2 hours 15 minutes with Oak and Sweet Acacia (suppose to be like Mesquite).

I adapted one of the recipes that I found (no Green Tabasco over here and I did not have any Red, so I replaced the two with Chipotle pepper sauce best idea I have had in a long time !).

Here is what I coated the peanuts with :

Ingredients:
2 cups raw peanuts
2 TBS melted butter
3 TBS Chipotle pepper sauce
1 tsp Worcestershire
tsp granulated garlic
tsp salt
tsp dry, ground, yellow mustard

In a mixing bowl, combine melted butter and all the seasonings, stirring until well mixed.
Add nuts and stir thoroughly to coat.

This is Good !

I am really happy with the result, now that I found the right time and temperature I will do this again.
