View Full Version : My Aunt Eddies German Potato Salad

My Aunt Eddie left us some years back (7 ??) and she always made a German potato salad for our family get togethers. Be fore she passed, she shared with me her recipie as I always loved it growing up and as an adult.

I don’t think its anything out of the ordinary, but it’s the standard by which I judage all potatoe salads

5 lb red potatoes boiled

Slice while still warm (not hot), top with sliced green onions, S&P to taste

Cool overnight

Chopped boiled eggs (if you need a recipe for boiling eggs…I’m leaving you)

1 lb bacon fried and made into bits, save the fat

Dressing : in sauce pan Add to the warm fat 3/4 c vinegar, 3/4 c sugar, 2 c water (reserve 1/4 cup) 4 TBL corn starch. Heat water sugar, vinegar with fat, add startch to reserved water, dissolve, add to dressing on stove and heat til thickened, if too thick add some more water

Mix all the players in a bowl and serve either cold, room temp, or heated in the oven

Sometimes she would add celery seed or whole caraway seed, I think I liked the caraway seed the most.

also i down sized this batch, 3 lbs of spuds
