View Full Version : Epic Cheese ... Near Fail

I thought I would smoke some Colby Jack today since I haven't had any in some time. I had used the grill earlier to cooks some burgers for the wife, but the coals were out. Apparently there was some residual heat and that mixed with the warmer temps of the day were a touch too much for the cheese to take. Here is the short story of a semi Epic Fail.

I only post this because A. It's funny and 2. To show that we all make silly mistakes....

I knew that I needed to set up the cold box for it .. but just too lazy to do it I suppose. I guess it will eat just the same though :msn-wink:

Hey, I did the same thing about 9 months ago. You're not the first and you're not going to be the last! I hate to say this but you just joined a club that isn't very exclusive at all!

Yeah I've seen a lot of "over smoked" cheese in warm temp weather. I figured it would be good for the new folks to see that even people who have been at this for a while still have moments :roflmaoha0:

what type of smoke did you use?

I used a blend of hickory, cherry, and oak pellets I believe. It won't go to waste for sure.

I used to work at this one restaurant years ago. Most of the small staff had been there for years and could communicate telepathically. As such they did tell me a lot at times. But I'm a quick learn. Got busy one night and fired off the second oven. Little bit later I go to throw a sauté pan in the oven to finish cooking whatever. I had just found the dumbest place to stash cutting boards. In a working oven. The didn't think it was as funny as I did. Cutting boards looked a lot like that cheese thru the grate.

Joe, if ya wanted to know how to make grilled cheese you should have called me. You're way off base here.

Start with THIN slices of cheese, couple slices of bread, and some butter. They call it "grilled cheese", but you don't actually cook it on a grill...:msn-wink:
