A buddy of mine asked me if I would smoke elk or deer for him this year if he gets one. I've never done either one and would like some help with this, especially seasonings and internal temps.:sign0092:

Vegas, I did some deer shoulders a while back. I would recommend that you us some bacon. The reason being is that they tend to dry out too quickly. The bacon will render down into the shoulder (theoretically, I suppose). I did seem to help quite a bit. I took the temp to 148 on these.

I can't advise you on the elk, as I've never smoked one of them. I would expect them to be very similar though.

The elk is the same as deer as far as being lean. Just as BA said, bacon helps. Did an elk roast last spring covered with bacon and took it to 190 degrees. After resting a couple of hours, it pulled like pork!

Either one is very good med rare if cut into steaks and bacon wrapped.

A good oolive oil or bacon grease rub down is good too.
