I did an injection for my roast beef yesterday. Let me know what you think. Came out with a good taste.

2 cups low sodium beef broth
3 tbs margarine
1/2 cup mixed Montreal steak spice and basic steak spice
1 tbs Worcester sauce
garlic powder to taste
1 - 2 tbs of beef concentrate

bring to a simmer for 1/2 hr

inject beef 1 to 1 1/2 hr before cooking

Allowing it to sit overnight to equalize in the muscle would help it a lot.

Sure. It is always best to let the injection migrate evenly throughout the muscle structure. Not necessarily overnight, but for a few hours. Just likek you getting a shot in the arm, it takes a while for the medicine to move.

I agree with Tim. So-called "five minute marinades" don't really cut it. Yeah, five minutes to inject, but hours to absorb. Marinating takes time, whether it's shot deep into the meat or soaked in from the outside.

Thanks everyone. I will try that next time. I will let the injected meat wait longer before cooking.
