Was -11 with 23 mph winds today so instead of grilling outside went with the Showtime rotisserie. This was a 4 lb. sirloin tip buffalo roast seasoned with Tatonka Dust and wrapped in Saran Wrap to rest overnight in the fridge.

After it was on the rotisserie spit added grilling bands to secure the roast.

Cooked to 145 and rested for 20 minutes for a medium rare.

Looks very good. Bet that dust gave it a great flavor. If it makes you feel any better, I just posted a smoke from yesterday. It was 65F and sunny, light winds.

Can you tell us about the flavor of the buffalo. I have a resource for it here in Oklahoma but haven't taken advantage of it yet.

I envy you for the temperatures you have.... :frusty:

Buffalo is much leaner in fat, the taste is very similar to beef with more of a bolder "beefier" flavor in my opinion.

My father in law raises buffalo and the bison pasture is adjacent to 3 sides of our yard. Quite often in the summer they will be almost in our front yard!

Here are some front yard pics, occasionally in the spring the calves accidentally roll under the fence, or bulls will get in sparing matches and push each other through the fence and we have to open a gate and chase them with a 4 wheeler or pickup to get them back in.
