With deer hunting season upon us I thought I would post a favorite my wife and I have been making since '06 in case any fellow hunters may be looking for something a little different to do with their venison.

This venison bacon is basically a 3 day deal; it is better than bacon, but different. We have used beef, buffalo, venison, antelope and elk; all taste great!

Day 1

Here are pic's of the meat being ground, seasonings mixed in and have it loafed up for a nights stay in the fridge; this is a 36 lb. batch.

Day 2

Here is a pic of the loaves taken out of the pans, on the smoker racks just prior to putting them in the smoker.

After the smoke, loafs of meat are brought inside, then we let them cool down to near room temp and then put away sealed in a container, in the fridge overnight to chill.

Day Three

Here are a few pic's of the venison bacon sliced and then packaged.

:thumbs up: Nice to see someone else using Curley's seasonings. Didn't do any bacon last year and most of the family chewed my :moon: at the family reunion this year! Guess that means a batch this year for sure. Love that bacon! :Drool2:

4885Made my first batch of vinison bacon last week. Won't be my last!:wow:
Smoked on my UDS for about 6 hours. Used a couple chunk4884s of cherry for flavor. Quite an involved process, but will repeat for sure. Now I have a good reason to get another deer with the flintlock!
