Hey chaps, it's icy winter here in South Africa at the moment and is a time that my dutch ovens really work. Please send a few ideas for beef. In winter, I normally cook a beef and beer with vegetables or a hot lamb curry, but it's time for change. Any ideas??

how about ox tail? or osobuco(sp?) Beef tounge is good. Ideas came from my freezer, I just got a half beef and got the heart, tounge, tail, liver, and plenty of steak.:thumbs up:

i vote something with oxtail.

btw, send some of that cool air up here. the devil just left cause it was too dang hot here :msn-wink::roflmaoha0:

I'm a big fan of braised lamb shanks or beef short ribs.

Shepherds pie is always nice as well, or beef stew with biscuits baked over the top.

Tell us about your beef and beer dish.

Hearty Beef Stew with a grilled Pepper Jack Cheese Sandwich will warm them bones up.
Also a good Hot, Chunky Chili with some Jalapeno/Cheddar Cornbread.

Great idea, I have done a couple of oxtails and there is never a morsel left in the pot at the end of lunch. I generally add bacon and veggies to mine, what ideas do you have?

Beef Stroganoff or Chile Colorado.

My wife makes a killer beef Stroganoff, so I don't attempt it, after 14 years of marriage I have learnt not to try and match her dishes :smack: . Tell me more about the Chili Colorado :Drool2:

Very simple: Stewing beef/brisket/chuck are all brilliant with this dish. Fry up the meat which has been coated in flour until brown, remove from the pot. Fry up a large onion with a lot of minced garlic until tender. Add the meat and cook for a further 10 minutes. Add sliced carrots, sliced beans and cubed butternut, 1 pint of your favourite beer (my favourite is our award winning black label, 5.5% alc), add a pint of beef stock mixed with 2 heaped table spoons of hearty beef or oxtail soup powder. Stir it all together, close the lid for about an hour and a half. Continue to drink your favourite beer. Serve over pot bread, mashed spuds or rice.

I think we would call that beef stew with beer. One of my faves.
