Hey guys.I smoked some cheese for the first time the other day
and everything went well but the smoke flavor is very strong.
Will it mellow out over time?

Here is how I did it. I have a cheap little round electric smoker
and I pulled out the element and took one lit charcoal lump and put some apple wood chips on it and smoked it for about 1 1/2
hours. To my suprise the cheese never really changed color like
I thought it might.

Guess it depends on how heavy the smoke was how much it will mellow out. Use a light smoke then seal up for a few days.

What kind of cheese did you smoke?

I didnt think it was to heavy of a smoke but I guess it was?
I did 1 block of sharp cheddar and 2 blocks of colby jack.

The cheese is edible just a little stronger than I would of liked.
I will keep working on it. Less smoke and cut down the time.

Wrap your cheese up tight and try it again in a week or two. It will mellow out over time.

Yes, it will spread on into the cheese so that it isn't as heavy on the surface. Next time bring the cheese to room temperature before you smoke it. Less of the undesirable smoke solids will precipitate out on the surface of the cheese, and as always make sure you have good quality thin smoke.
