I had picked up a belly recently and quartered it so that I could play around with a few different things, turns out this quarter was destined to become bacon.

Just over 3 lbs raw.

Hit it with a cure of instacure #1, salt, and brown sugar

Then a blast of maple syrup

Into a bag for 6 days, flipped it once a day during that time.

Out of the cure and after a rinse and light scrub

Cold smoked with apple and cherry for about 6 hours.

Put it back in the fridge to chill for a little easier slicing. Ran it through the old Hobart and had this small pile to bag up.

To echo the comment you always hear, beats the hell out of store bought. Hardest part of the whole process is finding the bellies.
